Matcha French Toast

Serves 2-3

Start your morning on a delicious note with a vibrant twist on a classic favorite - Matcha French Toast made using our Venerdi Gluten Freedom Splendid English Muffins.

French Toast Ingredients:
1 packet Gluten Freedom Sourdough English Muffins, split in half
2 eggs
Β½ cup milk
1 tablespoon honey or maple syrup
Pinch of cinnamon powder
Matcha Cream Ingredients:
1 cup greek or coconut yoghurt
2 tablespoons matcha powder
2 tablespoons honey or maple syrup

To Serve:
Fresh berries
Extra honey or maple syrup
Extra sifting of matcha powder

Method:
In a large mixing bowl, whisk the eggs, milk, honey and cinnamon powder together.
Preheat a large frying pan over a medium temperature.
Add a drop of butter or oil to grease the pan.
Drop 2 English muffin halves in the egg wash and soak on either side until covered.
Drain off the excess and transfer the muffins to the frying pan to cook until golden. This should take around 1-2 minutes max.
Flip the muffin and cook the other side.
Transfer the muffins to a wire rack and allow them to cool whilst you cook the rest of the batch.
To make the matcha cream, simply whisk together the cream ingredients in a small bowl.
Serve your french toast muffins as a stack or on a platter. Dress each muffin with the cream, fresh berries, drizzle with maple syrup and sprinkle with matcha powder.
