Ingredients

2 slices Broken Black Rice & Polenta Sourdough
Small handful of Baby Kale
Small handful of Alflafa Sprouts
½ an Avocado, sliced
A few slices of cucumber
2 Tablespoons Ricotta (to keep this recipe dairy free, instead opt for your favourite DF cheese)
2 Tablespoons Basil Pesto
Squeeze of lemon juice

Instructions

Very lightly toast your slices of Broken Black Rice & Polenta Sourdough
Top one slice of sourdough with the basil pesto, and the other half with the ricotta.Season the ricotta with a sprinkle of salt and pepper.
Top the ricotta with the slices of avocado, followed by a squeeze of lemon juice, then the slices of cucumber, baby kale and alfalfa sprouts. Close the sandwich with the pesto topped slice of sourdough and enjoy!

A french toast stack so delicious it will make mums whole weekend 🍓🫐🥞 Check out the recipe below!

🍞 Ingredients:
4 x slices Pure Foodie Paleo Almond & Linseed
2 x eggs
¼ cup coconut milk
½ teaspoon ground cinnamon
1 tablespoon coconut sugar
1 tablespoon coconut oil

🍓 To Serve:
Fresh fruit (we love an assortment of fresh berries)
Pure maple syrup
Coconut yoghurt

Method:
1. In a bowl, whisk together the eggs, coconut milk, cinnamon and coconut sugar until well combined.
2. Heat a pan over a medium heat and add your coconut oil.
3. Dip your bread into the egg mixture, soaking each side well.
4. Place each slice of the soaked bread into the pan and fry each side for 3minutes or until golden brown.
5. To serve, stack your toasts and top with coconut yoghurt, berries and a drizzle of maple syrup.
