Using our new and improved Simply Soft Sourdough - now with a good source of fibre! This sandwich is jam packed full of greeny goodness!
Ingredients
The pesto:
1 cup pine nuts, lightly toasted
⅓ cup olive oil
1 lemon zest and juice
2 handful fresh basil
1 tsp dried oregano
3 tbsp nutritional yeast
S & P to taste
The pickled radish:
3-4 small baby radish, thinly sliced
⅓ cup apple cider vinegar
⅔ cup water
1 tsp salt
2 tsp sugar
Other ingredients:
8 slices of simply soft sourdough
1 avocado, sliced
2 tomatoes, sliced
Fresh baby rocket leaves
Fresh sprouts
Instructions
In a food processor, process all the ingredients for the pesto until smooth and creamy.
In a small saucepan, heat up apple cider vinegar, water along with salt and sugar for the pickling liquid until boiling and then pour the pickling liquid over sliced radish.
To make the sandwich, spread 1-2 tbsp pesto over simply soft sourdough bread and layer up with some sprouts, rockets, tomato, and avocado slices and pickled radish.
