A deliciously moorish take on the classic BLT! With a fried egg, avocado, tomato, lettuce and bacon piled on an Everything Sourdough Bagel, this stacked breakfast bagel is sure to delight!
Ingredients
- 1 Gluten Freedom Everything Sourdough Bagel
- 1 free-range egg
- 2-3 slices of avocado, as desired
- Small handful of lettuce
- 2-3 slices of tomato, as desired
- 1-2 strips of streaky bacon, as desired
- Salt and pepper to season
- 1-2 tbsp tomato relish
- 1 tbsp olive oil
- Butter, as needed

Instructions
- Carefully slice bagel in half and lightly toast.
- Heat a skillet over a medium heat and fry the egg until cooked to preference.
- Add a little oil to skillet and cook the bacon, the longer itβs on the crispier itβll be.
- While bacon is cooking prep your fillings, slice tomatoes and avocado. Remove bacon from skillet onto paper towel covered plate to absorb excess oil.
- Butter both bagel halves and on the bottom half spread tomato relish and stack bacon, lettuce, sliced tomato, avocado, and fried egg.
- Season as desired and then add the other bagel half to complete your stack.
