Gluten Free Mini Cob Loaves

Serves 3

All the comfort of a classic cob loaf  made gluten free and perfectly portioned. These mini cob loaves are filled with a rich, creamy spinach and onion dip, topped with melted cheese, and air fried until golden and bubbling.

 

 

You’ll need:
  • Venerdi Gluten Freedom Sourdough Baps
  • 125g sour cream
  • 125g cream cheese
  • Spinach
  • 1 packet Culley’s Onion Dip Mix
  • Grated cheese
  • Olive oil spray
Method:
  1. Slice the tops off the baps and carefully hollow out the centres, keeping the bread pieces aside.
  2. Spray the bread offcuts with olive oil and cook in the air fryer until golden and crispy.
  3. In a saucepan over low heat, combine the sour cream, cream cheese, onion dip mix, and spinach. Stir until smooth and well combined.
  4. Add grated cheese and continue stirring until melted and creamy.
  5. Spoon the mixture into the hollowed-out baps.
  6. Air fry until the tops are golden and bubbling.
Serve warm with fresh veges and the crispy toasted bread pieces.
Note: This can easily be made dairy free by using dairy free cheese, sour cream and cream cheese
