Gluten Free Spiced Fruit French Toast Sticks

These gluten free spiced fruit French toast sticks are crisp on the outside, soft inside, and full of warm cinnamon flavour. Air-fried to golden perfection and coated in cinnamon sugar, they’re served with fresh raspberries and maple syrup for an easy, cosy treat.
Ingredients
• 1 packet gluten-free spiced fruit sourdough English muffins
• 2 eggs
• ½ cup almond milk
• 1 tsp vanilla essence
• 1 tbsp maple syrup (plus extra to serve)
• 2 tbsp white sugar
• 1 tsp ground cinnamon
• Fresh raspberries, to serve
Method
1. Prepare the custard: In a bowl, whisk together the eggs, almond milk, vanilla essence, and maple syrup until well combined.
2. Slice the muffins: Cut each English muffin into thick strips or “sticks.”
3. Soak: Dip each piece into the egg mixture, ensuring all sides are well coated. Allow excess mixture to drip off.
4. Air fry: Arrange the coated sticks in a single layer in the air fryer basket.Cook at 180°C (350°F) for 8–10 minutes, or until golden and cooked through, turning halfway if needed.
5. Make cinnamon sugar: In a small bowl, mix the sugar and cinnamon.
6. Coat: While still warm, toss or sprinkle the French toast sticks with the cinnamon sugar.
7. Serve: Plate with fresh raspberries and drizzle with extra maple syrup.
Optional Tips
• Add a pinch of nutmeg for extra warmth.
• Serve with yoghurt or whipped cream for a more indulgent version.
• Best enjoyed fresh and warm for maximum crispiness.
