A delicious burger recipe to go with our new and improved Simply Soft Sourdough buns, now lighter & softer than ever + now high in fiber! Stuffed full of with a delicious falafel patty, aioli, onion, cucumber, tomato and lettuce! A scrumptiously fresh burger that is vegetarian, and free from gluten & soy!
Ingredients
The Falafel:
- 300g dried chickpeas
- 1 large brown onion, diced
- 4-6 garlic cloves, peeled
- 1 bunch fresh parsley, roughly chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp smoked paprika
- 1 tsp cayenne pepper (optional)
- S & P to taste
- 2-3 tbsp olive oil
- ⅓ cup chickpea flour
- ½ cup all purpose flour
The pickled onion:
- 1 red onion, thinly sliced
- ⅓ cup apple cider vinegar
- ⅔ cup water
- 2 tsp sugar
- 1 tsp salt
- 1 tsp whole coriander seeds, optional
Other ingredients:
- 1-2 packet Simply Soft Sourdough Bun
- 1-2 avocados, mashed
- Fresh rocket leaves
- 2-3 tomatoes, sliced
- 1 cucumber, sliced
- Aioli sauce

Instructions
- Soak dried chickpeas overnight, rinse, drain and pat dry.
- In a food processor, blend chickpeas, onion, garlic, parsley, spices and olive oil to form a coarse mixture, add in chickpea flour and all purpose flour and mix until well combined.
- Preheat oven to 180 Celsius and line a baking tray with baking paper, scoop a handful of the falafel mixture and form into a patty, repeat and transfer onto the baking tray.
- In a large frying pan, heat some oil with medium-high heat and place falafel patties into the pan, fry for 3-5 minutes until crispy and brown on the outside, flip gently.
- Transfer pan-fried falafel patties onto the baking tray and bake for 15-20 minutes until cooked crispy.
- To make the pickled onions, simply boil all the ingredients for the pickling liquid and pour over sliced onions.
- Slice buns into half, grease both sides with olive oil and lightly toast them in a frying pan.
- To assemble the burger, spread 1-2 tbsp mashed avocado over a bun and layer up with some rockets, a falafel patty, aioli sauce, sliced tomatoes, cucumbers, and pickled onions.
