A stacked sandwich bursting with flavour! With egg, pesto, haloumi, and avocado heaped on this sandwich is sure to be your go-to lunch choice in no time.
Ingredients
- 2 slices Organic Boosted Brown Sourdough
- 60g haloumi, cut into 1cm slices
- 1 free-range egg
- 2 tablespoons basil pesto
- Small handful baby spinach leaves
- Thinly sliced red onion, as desired
- 2-3 slices avocado
- Chill flakes, sea salt and cracked black pepper to season

Instructions
- Toast the bread.
- Heat a skillet over a medium heat and add a little oil. Fry the haloumi until golden on both sides. Fry the egg until cooked as desired.
- Butter the toast and spread one side with the pesto. Place the baby spinach on the other side. Top the spinach with haloumi and red onion. Add with the fried egg and avocado slices. Sprinkle with chilli flakes, sea salt and cracked black pepper.
- Enjoy immediately.
