Everything Sourdough Stacked Breakfast Bagel

A deliciously moorish take on the classic BLT! With a fried egg, avocado, tomato, lettuce and bacon piled on an Everything Sourdough Bagel, this stacked breakfast bagel is sure to delight!

 

Ingredients

  • 1 Gluten Freedom Everything Sourdough Bagel
  • 1 free-range egg
  • 2-3 slices of avocado, as desired
  • Small handful of lettuce
  • 2-3 slices of tomato, as desired
  • 1-2 strips of streaky bacon, as desired
  • Salt and pepper to season
  • 1-2 tbsp tomato relish
  • 1 tbsp olive oil
  • Butter, as needed

Instructions

  1. Carefully slice bagel in half and lightly toast.
  2. Heat a skillet over a medium heat and fry the egg until cooked to preference.
  3. Add a little oil to skillet and cook the bacon, the longer it’s on the crispier it’ll be.
  4. While bacon is cooking prep your fillings, slice tomatoes and avocado. Remove bacon from skillet onto paper towel covered plate to absorb excess oil.
  5. Butter both bagel halves and on the bottom half spread tomato relish and stack bacon, lettuce, sliced tomato, avocado, and fried egg.
  6. Season as desired and then add the other bagel half to complete your stack.
  7. Enjoy!
