Show Mum just how much she means this Mother’s Day with a simple, heartfelt breakfast. It’s easy, delicious, and perfect for little helpers to join in.

You’ll need:

1 packet of Gluten Freedom sweet potato sourdough bread
Pesto of your choice
Eggs
Fresh chives, finely chopped
Bacon

Method:

Lightly spread pesto over one slice of sweet potato sourdough.
Take a second slice and use a heart-shaped cookie cutter to cut out the centre. Place this slice on top of the pesto-covered one.
Carefully crack an egg into the heart-shaped hole.
Place in the air fryer at 160°C for around 8 minutes, along with the cut-out heart pieces—they make perfect egg dippers.
Cook until the egg is set to your liking and the bread is golden.

Serve warm with crispy bacon on the side and a sprinkle of fresh chives for a finishing touch.
