The sweetest breakfast treat! This custard toast is the perfect combination of gooey custard and sweet, juicy strawberries.
You’ll need:
• Gluten Freedom Splendid Sourdough Muffins
• 1 egg
• 2 tbsp coconut yoghurt
• Maple syrup, to taste
• Fresh strawberries, sliced
• Icing sugar, for dusting
• Fresh mint, to garnish
Method:
1. Slice the muffin in half and gently press the centre with a spoon to create a small well.
2. In a bowl, whisk together the egg, coconut yoghurt, and a drizzle of maple syrup until smooth.
3. Spoon the mixture into the muffin wells and top with strawberries.
4. Place in the air fryer and bake at 180°C for 10 minutes, or until set and lightly golden.
5. Serve warm, dusted with icing sugar, finished with a dash of maple syrup and fresh mint leaves.
