Heat a glug of olive oil in a sauté pan over a medium heat. Add the greens, garlic and a pinch of salt. Sauté for 3-5 minutes until wilted and just tender.
Toast the sunflower seeds and sesame seeds in a dry skillet over a medium heat until lightly browned. Remove from the heat and stir through the tamari.
Toast 4 slices of Paleo Super Seeded. Butter if desired and cut in half.
Bring a medium saucepan of water to a boil. Place the eggs gently in the water and cook for 6 1/2 minutes. Peel carefully until cold running water and cut in half.
Place eggs on top of the cooked greens. Add some cherry tomatoes, a dollop of hummus and a sprinkle of toasted seeds. Serve with the Super Seeded toast.
