Vibrant, delicious and packed full of goodness, this sandwich is the perfect lunch!

Fresh, vibrant and delicious. Perfect for a simple and quick lunch.

Ingredients

2 slices Broken Black Rice & Polenta Sourdough
Small handful of Baby Kale
Small handful of Alflafa Sprouts
½ an Avocado, sliced
A few slices of cucumber
2 Tablespoons Ricotta (to keep this recipe dairy free, instead opt for your favourite DF cheese)
2 Tablespoons Basil Pesto
Squeeze of lemon juice

Instructions

Very lightly toast your slices of Broken Black Rice & Polenta Sourdough
Top one slice of sourdough with the basil pesto, and the other half with the ricotta.Season the ricotta with a sprinkle of salt and pepper.
Top the ricotta with the slices of avocado, followed by a squeeze of lemon juice, then the slices of cucumber, baby kale and alfalfa sprouts. Close the sandwich with the pesto topped slice of sourdough and enjoy!
