Ingredients
- 2 slices Broken Black Rice & Polenta Sourdough
- Small handful of Baby Kale
- Small handful of Alflafa Sprouts
- ½ an Avocado, sliced
- A few slices of cucumber
- 2 Tablespoons Ricotta (to keep this recipe dairy free, instead opt for your favourite DF cheese)
- 2 Tablespoons Basil Pesto
- Squeeze of lemon juice
Instructions
- Very lightly toast your slices of Broken Black Rice & Polenta Sourdough
- Top one slice of sourdough with the basil pesto, and the other half with the ricotta.Season the ricotta with a sprinkle of salt and pepper.
- Top the ricotta with the slices of avocado, followed by a squeeze of lemon juice, then the slices of cucumber, baby kale and alfalfa sprouts. Close the sandwich with the pesto topped slice of sourdough and enjoy!
