Breakfast Muffins with Bostock Brothers Chicken Rashers and Rocket
Serves 4
Our incredible friends at Bostock Brothers sent us some of their brand-new Chicken Rashers, so we had to turn them into the ultimate breakfast muffins using our Gluten Freedom Splendid Sourdough English Muffins!
You’ll need:
• 1 packet Gluten Freedom Splendid Sourdough English Muffins
• 1 packet Bostock Brothers Chicken Rashers
• 6 eggs
• Fresh parsley, chopped
• A handful of rocket
• 1 avocado, sliced
• Barkers of Geraldine Caramelised Onion Relish
Method:
1. Toast the muffins until golden and crisp.
2. Whisk the eggs, season well, and stir through chopped parsley. Pour into a lined baking tray and bake until set. Once cooked, cut into muffin-sized squares.
3. Cook the Chicken Rashers in the air fryer until golden and heated through.
4. Assemble by spreading caramelised onion relish on the muffin base, then layer with egg, Chicken Rashers, rocket, and sliced avocado. Top with the muffin lid and serve warm.
